monday meal madness!

It’s Monday, and, boy, was that the fastest weekend ever! Yours?

Please excuse some not-so-awesome pictures of a few of our dinners from the last week. I was having some camera difficulties – the kind where the pictures look great on the tiny screen, but not-so-great in reality.

And I forgot to take a picture of last night’s dinner that Mr. Fresh Scratch made: apple-cottage cheese pancakes from The New Moosewood Cookbook (Mollie Katzen’s Classic Cooking) - it’s available in hardcover in its original edition for around $2 used on Amazon right now! I was so famished when I got home late after samba practice {the big parade is coming in two months!}, that I could only think to devour them. They were delicious.

Get out your menus and grocery lists – though we had a week full of meetings last week, we still had some good meals for you!

Smitten Kitchen: Raspberry Ricotta SconesMy cousin Evie had encouraged me to try Deb Perelman’s raspberry ricotta scones from The Smitten Kitchen Cookbook. Can I just say that these were the most perfect scone I’ve ever made? They were moist from the ricotta, and the raspberry flavor shined through perfectly.

We ate them for dinner with some homemade yogurt and some homemade sausage patties that I’d had in the freezer. You know we love breakfast for dinner around here!

SmorgasbordThe Mr. had written “Smorgasbord” on the menu for one of his nights to cook last week. It happened to be a night when we had to rush off to a school meeting where we both had responsibilities, so it was perfect. To me, “smorgasbord” means some sort of heavy buffet, but, apparently – tomato/to-mah-to – he thinks it means it’s an antipasto platter.

blue cheese lasagnaI was so excited to see he had also written “lasagna” on one of his nights. Imagine my surprise when that first bite had the tang of creamy blue cheese.

I couldn’t decide whether I liked it or not. It was…interesting.

green eggs and hamDo you like green eggs and ham?

We had a little celebratory dinner in honor of Dr. Seuss’ birthday. We did some research: Amelia Earhart would have been seven years older than Dr. Seuss right now. Huh.

Do you celebrate his birthday with your kiddos in any fashion?

True story: I had the day wrong. Luckily, no one noticed.

homemade yeast rollsOne thing I’m really stoked about and proud to have accomplished in my 35th year is getting over my fear of baking bread. I’ve made all sorts in the last twelve months, and I have loved every loaf/roll. Turns out it’s not so hard, after all. You just need time.

I spent Saturday kneading the dough of these rolls from local artistic gem Nikki McClure’s little cutie, How to Cook the Perfect Day. I loved how she described at one point of the process that the dough should feel soft “like your earlobe.” A perfect description!

The rolls are actually supposed to have poppy seeds, but I am not a huge fan. The Mr. was a little disappointed to hear I had skipped that ingredient.

Anyway, this was supposed to have been a meal for eating in front of the Sounder’s soccer game on tv that night, but we had the time wrong. Whoops.

And now we are off and running on another week.
