“Argo” winning for best picture at the Oscars last night?

Did I call it a few months ago, or what??? This is when I wish I was a gambler.

The first thing I thought of this morning was Ben Affleck’s acceptance speech for Best Picture. Are there many things better than a humble, genuine person?

The second thing I thought of was, “It’s Monday Meal Madnesssssss!”

So get out your grocery lists and let those wheels start turning. What are you making for dinner this week? If you’re the least bit unsure, here are a couple of pretty easy ideas.

flat iron steak with butternut squashI was so excited all day long to grill these marinated flat iron steaks. The recipe came from The Working Parents Cookbook: More Than 200 Recipes for Great Family Meals, and it was a super-easy, hour-long soak in the simple-to-throw-together marinade, followed by about 10 minutes on the grill.

Only, the weather changed suddenly that afternoon – it so felt like March – and the rain began to pour. Grilling in a down pour? No thank you.

I said hello to the broiler in my oven, and they came out just fine.

I roasted a butternut squash {peeled and diced} in olive oil, salt and pepper. It was a simple and filling little meal.

pear sandwichMr. Fresh Scratch made these delightful little sandwiches using the leftover baguette from the steak dinner. Each piece was spread with a thin layer of cream cheese, topped by cottage cheese, blue cheese, sliced almonds, and sliced pears.

They were surprisingly filling.

Speaking of grilling, are you a gas-griller or a charcoal purist? And why?

  2. I use both, but I prefer charcoal. It’s making me want to grill now! Need to throw some chicken on there for dinner.

  3. I’m a gas grill girl because it fits in with my attention much better. (Think gnat. )

  4. ‘Mrs. Affleck’ – I hope you had a wonderful time in dream land celebrating the big win! I immediately thought of you last night when the winner was announced. :)

    • Aww! My older daughter saw Jennifer Garner on the red carpet and – without knowing mama’s celebrity crush – said, “That lady looks like you!” I about died. Second best moment of my night!
