How are we doing this morning? I am still full from the Super Bowl. Ugh.
I was rooting for Beyonce, as you may remember from Friday’s post. I think she won, although I wanted her to be wearing more clothing. When my girls asked why she was dressed like that, my husband said, “She’s going swimming afterward!” I about spit out my Dirty Shirley cocktail.
Even if you are not ready to think about food yet after yesterday afternoon, I am planning ahead for when you are. Here are some ideas for dinner this week:
Mr. Fresh Scratch made us a nice salad with pears and some salmon filets cooked on the stove top. I usually bake them, so I was like, “What are you doing?!” But they were delish.
However, a meal like that and Teensy-Weensy’s in tears. “I don’t like lettuce!!!! This ham-on is gwoss!” She ate pears for dinner, basically.
I used the leftover chicken from last Sunday’s roasted birdie for a hearty shepherd’s pie. I also looked through the crock of potatoes in the pantry and found a few varieties that had been bought for other dishes and somehow forgotten. I love using up leftover stuff. And this was the perfect hot meal for a rainy night. I based it off of a recipe from The Working Parents Cookbook: More Than 200 Recipes for Great Family Meals, which I am nearing the end of cooking through.
We have a busy week ahead of us, so we have a nacho night, pizza night, and even a picnic with sandwiches in Mr. Fresh Scratch’s classroom planned. How about you?





Your husband’s comment is hilarious.I didn’t watch the Super Bowl at all, but you inspired me to look up Beyonce’s performance. That girl can sing, but that outfit is tacky. I wish I had a small bit of her confidence though!
Speaking of singing, I thought of you last night while I was baking. My soundtrack was the Smashing Pumpkins Pandora station. Lots of good stuff! You should give it a listen.

Man you’re my hero being able to look ahead and plan for the week. Even if I figure out the next two days they’re liable to change so most of the time I’m flying by the seat of my pants!
Flying by the seat of your pants is exciting! My husband loved last week when we somehow didn’t have the ingredients for something he’d planned to make, and he got to be spontaneous “for a change” – he made a huge deal of it!
Flying by the seat of your plants in meal prep can quickly devolve ( a word?) into “Fend for yourself” nights though. My offspring are bigger than yours though so that works sometimes.
I have a tentative theory that guys in general are a bit more intuitive when they cook, switching out ingredients and just “going with their gut.” I tend to be pretty rigid and have to at least start from a recipe.
My husband does this all the time. I am a total recipe follower, like you!
