if the cake wasn’t for you…

Let’s pretend you saw my Touchdown! Cake the other day and thought, “No way am I taking the time to press sprinkles onto Andies Candies, Fresh Scratch.”

You might like these recipes, then.

They are fast. They involve some cans of stuff, if you wish. And a couple bags of tortilla chips.

Of course, there are lots of ingredients on the list that’s about to follow {chips included} that you can make yourself, from, ahem, fresh scratch {haha!}, but you may want to laugh in my face and say, “Why?!”

Friends, here are my two favorite dips. Aunt Char gave them to my mom decades ago, and I then stole them. Because everyone likes a hot mess. Enjoy!

Bean Dip

1. Preheat the oven to 350 degrees. Get out a pie plate or other oven-proof dish that’s 9×9-ish {or double the recipe with a 13×9 pan! It is the Super Bowl, after all.}

2. Spread the following layers into the pan, in this order: one can of refried beans, one 4 oz. can of chopped green chiles, one 16 oz. jar of your favorite salsa, and one cup of shredded Monteray Jack cheese.

3. Bake for 20 minutes, until the cheese is starting to bubble.

This is especially snack-tastic with lime-flavored tortilla chips, which I haven’t bought since I was a youngster. This is the dip I’d bring to every Super Bowl party to which my friend Dan from college would let me tag along. This was back in the days when I did not understand football, but I sure liked to pretend I did. And I definitely understood there would be boys at these parties. Ahh, youth.

Artichoke-Chili Dip

1. Preheat the oven to 350 degrees. Again, get out an oven-proof pie plate.

2. Mix the following ingredients into a medium-sized bowl: 14 oz. can of chopped artichoke hearts {NOT the kind that are packed in a marinade!}, 1 cup of grated parmesan. one 4 oz. can of chopped green chiles, 1 cup of mayonnaise {I use Veganaise. Because Gwyneth Paltrow told me to, and I think it tastes just like Miracle Whip. Yum.}.

3. Spread the mixture into the pan and bake for 20 minutes.

This one’s great because you can serve it with tortilla chips or crackers or slices of bread. It would be awesome fancied-up as a spread for crostini.
