It has been below-freezing here in the evenings as of late. I am going to use that as my excuse for drinking a hot buttered rum every night for the past four nights.
They are such a guilty pleasure {can you read this last line in your head with a Martha Stewart voice? it sounds really good that way!}.
Plus, they go well with folding laundry, watching the Golden Globes, grading essays, watching “Downton Abbey,” or just surfing on Pinterest. A hot buttered rum is very versatile.
Let’s get you set up with one for this evening so we can toast each other across the miles.
My recipe is tweaked from the one I’ve been reading during my showers the entire holiday season – the one on the side of my bottle of Philosophy’s hot buttered rum shower gel! How hilarious is that? It was taunting me.
You’ll need:
1 c. sugar
1 c. brown sugar
1 c. butter
2 c. vanilla ice cream
1/2 tsp. cinnamon
1/2 tsp. nutmeg
the tiniest pinch of cloves
Melt the first three ingredients together on the stove. As annoying as it is, keep the heat on low. Otherwise, you’ll end up with clumps of brown sugar. Yes, I know this will take a little while.
Dump the ice cream into the large bowl of your mixer. Add the mixture from the stove, along with the spices, and beat until smooth.
Freeze in an airtight container.
Mr. Fresh Scratch commented that it’s kind of dumb to freeze it when you’re just going to let it melt, but, hey, it makes a fine ice cream. I mean, you could add raisins and call it “rum raisin”!
Each serving requires a mug, a scoop of the ice cream mix, and a half of a shot of dark rum. Fill the mug up the rest of the way with boiling water. Leave a little room to plop some whipped cream on top. Stir, then add your whipped cream.
{as a side note, I follow the Pinterest trick of making whipped cream last by plopping spoonfuls down on a waxed cookie sheet, freezing them, then storing them in a Ziplock bag in the freezer. you can top any drink with them this way! it’s awesome and always at the ready around here.}

This is beyond decadent!! The frozen whipped cream dollops make it that way. But it does sound delicious. When I was first reading the recipe I thought that was for one serving… 1 cup of butter, 1 cup of sugar….. and was just a little bit horrified but now I see all is right in the world.
This made me snort my tea out of my nose! Because, you know, with this blog and the way I love butter, that very well could’ve been the case! But, thankfully, it was not! I almost finished the mix while my husband was at his book club last night, but I decided to be nice and leave him the last scoop.
No nose tea snorting around that phone!
